Ingredients

  • 1 cup cooked chicken breast cut into 1 inch pieces
  • 4 cups zucchini "noodles" if you don't have a spiralizer, thinly sliced zucchini will work just as well
  • 1/2 cup carrot grated
  • 1/2 cup cucumber diced
  • 1/2 cup tomato diced
  • 1/2 cup bell pepper chopped
  • 2 tbs feta cheese crumbled
  • 2 tbs fresh basil chopped
  • dash salt and pepper use more or less to taste
  • 6 tbs Greek Vinaigrette Salad Dressing see link below for the recipe

Instructions

  1. Place all salad ingredients in a large bowl. Gently mix to combine. 

  2. Toss with 6 tbsp Greek Vinaigrette Dressing
