These pancakes taste great topped with your favorite fruit and nut butter.
Mix all the dry ingredients together in a medium bowl.
Add the almond milk, vanilla, maple syrup and apple cider vinegar and blend together. Let sit for 5–10 minutes, giving the ground chia seeds time to thicken the mixture.
Using a ¼ measuring cup, scoop out the batter and cook over medium heat in a lightly oiled pan.
