Got a few minutes? Spruce up your breakfast and make it interesting with these delicious Mediterranean scrambled eggs with roasted red pepper, oregano, and feta cheese.



  • 4 large eggs scrambled
  • 1/2 large roasted red pepper chopped
  • 1/8 cup whole milk works well with milk of your choice
  • dash salt
  • dash black pepper
  • 1 tsp oregano
  • 1/2 tbsp feta cheese crumbled


  1. Scramble 4 eggs on a medium hot nonstick skillet, then stir in roasted red peppers, salt, pepper, and oregano. Garnish with 1/2 tbs crumbled feta cheese.
