Ingredients

  • 1 pound Brussels sprouts Washed and cut in half
  • 4 medium carrots Washed and sliced (It should yield about 2 cups)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp ground cumin
  • 1 tbs olive oil

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper or aluminum foil and set aside.

  2. Place all ingredients in a large bowl and stir until well coated.

  3. Place vegetables on prepared pan and bake at 425 degrees for 15 minutes or until browned and tender. Stir in 7 minute intervals.
