Open Faced Egg & Cheese Tortilla
A twist on the classic version, made with eggs, cheese, salsa, and spicy yogurt.
- 1 6-inch corn tortilla
- 1 large egg scrambled
- 2 tbs salsa
- 2 tbs spicy yogurt see below in the directions how to make spicy yogurt
- 1 tbs cheddar cheese shredded
- 1 1/2 tsp green onions chopped
Preheat oven to 350 degrees.
To Make Spicy Yogurt: Combine 1 C plain Greek Yogurt, 1/2 tsp salt, 1/8 tsp cyan pepper, 1 tsp cumin, 1/2 tsp chili powder, 1 tbs chopped fresh cilantro, 1 tbs fresh squeezed lime juice
Bake tortilla on oven rack at 350 degrees for 8-10 minutes or until crisp. remove from oven and place on baking sheet.
Top tortilla with cooked scrambles egg, salsa, cheese, and green onions. Place back in the oven for 1-2 minutes or just until cheese begins to melt.
Remove from oven and top with 2 tbs spicy yogurt.
Instead of topping tortilla with a scrambled egg, try topping it with a fried egg.
