Ingredients

SALAD

  • 4 cups kale finely chopped
  • 1/2 cup carrot shredded
  • 1/2 cup sweet bell pepper chopped
  • 1 mandarin orange peeled and sectioned
  • 1 tbsp raw sunflower seeds

DRESSING

  • 1 mandarin orange juiced
  • 1/2 tbsp soy sauce or amino acids
  • 1 tsp sesame oil
  • dash black pepper
  • 8 cherry tomatoes cut in half

Instructions

FOR THE SALAD

  1. Mix kale, carrot, sweet bell pepper, tomatoes, and mandarin orange sections in a medium sized bowl

  2. After the dressing has been added and mixed, garnish with sunflower seeds

FOR THE DRESSING

  1. In a small bowl, whisk together mandarin orange juice, soy sauce or amino acids, sesame oil, and black pepper. Pour over salad and mix to evenly coat.
