Ingredients

  • 2 cups English cucumber thinly sliced
  • 1/2 cup red onion chopped
  • 3 tbs freshly squeezed lime juice
  • 1 tsp sugar
  • 1/4 tsp molasses
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbs olive oil
  • 1 clove garlic
  • 1 cup match stick carrots

Instructions

  1. Place cucumber slices, chopped onion, and carrot sticks in a medium bowl.

  2. Add remaining ingredients into a blender and blend until well blended. Pour over cucumber mixture.

Recipe Notes

This recipe calls for English cucumbers; any kind of cucumber will work.

If you don't have match stick carrots on hand, grated carrot can be substituted.
