This Mediterranean-style salad is quick and super easy to prepare. It is a terrific nutritiously loaded salad that’s satisfying enough to have as a meal!

Ingredients

  • 1 cup couscous already cooked
  • 1 tbs onion chopped
  • 1 clove garlic minced
  • 1 cup zucchini diced
  • 1 cup tomato diced
  • 1 15 ounce can chickpeas (1 1/2 cups) drained and well rinced
  • 1 cup sweet bell pepper chopped
  • 1 tsp salt use more or less according to taste
  • 1 tsp black pepper use more or less to taste
  • 1 tbs dried dill weed
  • 1 tbs olive oil
  • 2 tbs fresh lemon juice
  • 2 tsp lemon zest
  • 2 tbs apple cider vinegar
  • 2 tbs feta cheese crumbled

Instructions

  1. Place all ingredients except feta cheese in a bowl and mix well.

  2. Add crumbled feta cheese on top as a garnish

Note:

1 cup of dry couscous yields about 4 cups of cooked couscous
