With two kinds of cheeses, these eggs are sure to please. They're fluffy on the outside and creamy on the inside.



  • 1 large eggs
  • 1 ounce goat cheese
  • 1 ounce feta cheese
  • 1/4` tsp black pepper
  • 1/8 cup whole milk


  1. Beat eggs in a small bowl. Add milk, cheese, and pepper, stirring lightly. Set aside.

  2. Lightly grease a small frying pan, and heat over medium heat. When pan is hot, add egg mixture.

  3. As eggs begin to set, gently pull them across the pan with an inverted spatula, forming large, soft curds. Continue pulling, lifting, and folding eggs until all of the liquid is gone.

Recipe Notes

You will notice this recipe does not call for salt; that's because the cheese adds salt. 

Use a mister to coat the pan with oil, or use your favorite nonstick cooking spray.
