Ingredients

For the Salad

  • 2 cups broccoli chopped
  • 2 cups cauliflower chopped
  • 1 cup carrots shredded
  • 1/2 cup dried cranberries without sugar
  • 1/2 cup almonds sliced and toasted

For the Dressing

  • 3 tbsp olive oil
  • 1/2 tsp lemon zest
  • 1/2 tsp fresh basil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp thyme
  • 2 tbsp raw apple cider vinegar
  • 2 cloves garlic
  • 1/8 small onion
  • 1/2 tsp oregano
  • dash salt and pepper
  • 1 tbsp water
  • 1/2 tbsp raw honey or sweetener of choice

Instructions

To Make the Salad

  1. Place the first four ingredients in a large bowl; mix well.

To Make Dressing

  1. Place all dressing ingredients in a blender and process until everything has been well blended. Pour over top of salad and mix well to evenly coat the vegetable.

  2. Add toasted almonds and lightly mix.

Recipe Notes

This recipe tastes even better after it has rested over night.

I could eat this every single day for lunch! So simple, quick, nutritious, and tasty.       Thanks for stopping by! This broccoli salad has quickly become a family favorite. I don’t typically enjoy eating dried cranberries either; however, in this recipe, they add color as well as a small amount of tartness. For a little extra flavor and crunch, you can add some crumbled bacon on top. I have taken this salad to several potluck get-togethers, and it has always been a hit. In fact, I usually don’t have left overs. When you share this with your family, please come back and let me know how they liked it.

  2. WOW Broccoli Salad this is a lovely salad I could prepare ready for my work lunches. As you suggested as a meal on its own or I would love to include tuna or salmon. I have vegetarian friends, and I am always looking for simple and tasty dishes. As a lot of us are time poor, no need to cook is also an added benefit to this salad.

      This broccoli salad is amazing. I love broccoli; however, I don’t usually enjoy it as a salad. I think one of the reasons I love this salad s much is that the broccoli is chopped into small pieces and there are lots of other interesting flavors mixed. This salad will definitely be my “go to” salad this summer. I love that there is no mayonnaise, making it easier to keep on a warm summer day.

  3. Mmmm, this looks absolutely delicious.
    The name put me off but the image sold it to me.
    I struggle with enjoying the kitchen and love to learn how to make food look and taste good without using too many difficult ‘cooking’ skills.
    This recipe for the broccoli salad seems to fill all my needs.
    I read your story with interest. I’ve been looking for a way to lose weight and keep fit and healthy but I don’t really want a ‘traditional’ diet as I want it to become a way of life.

      You will find that most of my recipes are easy to make. I figure what’s the point of sharing a recipe if most people won’t be able to make it.
