Easy Baked Frittata With Tomatoes, Peppers, Onions, and Goat Cheese
This oven-baked frittata recipe features a quick and simple technique for making a delicious egg dish, perfect for entertaining or for a simple and satisfying meal you can serve at breakfast, lunch, or dinner.
- 2 large egg whites
- 6 large eggs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/3 cup whole milk you may use any milf of your choice
- 1 large cubanelle pepper chopped
- 1 small red onion minced
- 2 cloves garlic minced
- 1 tsp dried thyme
- 3 plum tomatoes seeded and thinly sliced
- 2 tsp olive oil
- 2 ounces goat cheese crumbled
Preheat oven to 375 degrees.
Lightly grease a 10"-11" round baking dish, and set aside.
Place onions and garlic in a food processor and process until minced.
Heat a small skillet over medium heat, and add oil. Swirl to coat the pan. Saute onions, garlic, and peppers until tender. remove from pan and place in prepared baking dish.
Layer plum tomatoes and thyme.
Add crumbled goat cheese.
carefully pour egg mixture over cheese and bake for 30 minutes or until lightly golden brown. Serve warm.
